Venison haunch

Our Venison haunch is boned and rolled by us well-trimmed and perfect for a change

preheat oven. For best results, seal the joint for 3-4 minutes in a hot frying pan, turning occasionally to prevent burning. Place the joint in a roasting tin in the center of the oven. Once cooked, allow resting for 10 minutes before serving. Due to the natural variability in the thickness of the meat, the cooking instructions provided are a base guide. For thicker joints, additional cooking time may be required. Remove strings before carving. (Time Rare 20 mins per lb, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
